Our Knives

Handmade by Cartecay Cutlery

Our handmade knives are designed, shaped, heat-treated, finished, and assembled in-house in Ellijay, Georgia. Each knife is built individually rather than produced on an assembly line, so minor differences in dimensions, finish, and handle appearance are part of the process.

We focus on practical designs, dependable steels, comfortable handles, and finishes intended to hold up to real use. Some knives are available ready to ship, while others may be made to order with the estimated production time shown on the product page.

The Sierra is our compact everyday fixed blade. Standard Sierra models feature G10 handles, while the Sierra Workman uses canvas micarta for a more traditional, utility-focused feel.

Custom Orders
